Lemon Blueberry Quick Bread


Hey!  I'm reposting my recipe for Lemon Blueberry Quick Bread from last Thanksgiving ... I baked this cute loaf of bread to snack on the day after thanksgiving ... when we have Turkey Ala King!  I adjusted the recipe on the package of the Nordicware Turkey pan and have included it in this post.   I used blueberries that I dried last summer instead of dried cranberries, too!  Yummy!

Lemon Blueberry Quick Bread

1/3 cup butter flavor shortening
¼ cup whipped cream cheese
¾ cup sugar
2 eggs
3 T lemon juice
2 drops lemon oil extract
1 ¼ cups flour
¾ teaspoon baking powder
½ teaspoon salt
½ cup buttermilk
½ cup dried blueberries

Whip the shortening, cream cheese, sugar, eggs, lemon juice and extract until creamy. Sift the flour together with the baking powder and salt and add this alternately with the milk and continue whipping until well blended. Fold in the blueberries and bake at 350 degrees for 40 – 50 minutes until a pick inserted in the center comes out clean. Cool on a rack for 10 minutes before inverting the bread.
