Because I had a few left overs from Thanksgiving Dinner, I decided to make a little pot of Turkey Gumbo Soup. I've been planning this for months and made sure I froze a few bags of okra last summer. I always freeze okra before using it, because when you slice it and cook it ... there is none of the notorious 'slime'!
This recipe is easily prepared in the crock pot. I used dried vegetables, but you could certainly use fresh or frozen (or left over cooked)!
In a crock pot, combine:
6 cups of water or chicken broth
as much left over giblet gravy as you have
1 - 2 cups of mixed vegetables
1 cup sliced okra
1/2 cup of spicy rice mix (I used Jolla Rice Mix)
1 - 2 cups of cooked turkey or chicken
4 - 8 ounces of sliced spicy sausage links
Cook on high for 3 hours. Add cooked pasta at the end of the cooking. There should be plenty of spice in the sausage and rice mix, but if you'd like more, add it.
